Spinach Frittata for Dinner
Simply washed and destalked the spinach and put in the frying pan till almost cooked. Then lightly beat two eggs and added the egg mixture to the pan.
Tip: When the egg is just set but still a bit runny on top, put for a few minutes in a really hot oven. This way the egg rises a bit and becomes crispy at the edges.
Found this in one of my cookbooks.
